1 cup uncooked quinoa
⅓ cup dried cranberries
⅓ cup chopped pecans
⅓ cup chopped green onions
1-2 cups oranges, peeled and chopped into bite-size pieces
Salt & pepper, to taste

Optional Add-ins:
⅓ cup raisins
¼ cup mint

2 teaspoons apple cider vinegar
1 medium orange, juiced
Zest of ½ orange
1 tablespoon of date syrup, or other sweetener


Rinse quinoa with fine mesh strainer until it rinses totally clear. In medium sauce pan, bring 2 cups water to boil. Add quinoa and bring mixture to a boil. Cover, reduce heat to low and let simmer for 15 minutes or until quinoa has absorbed all of the water. Remove from heat and fluff quinoa with fork. Place in large bowl and set aside to cool for 10 minutes.

To make dressing, place ingredients in food processor and combine until well blended. Adjust sweetness as necessary.

Pour dressing over quinoa and add cranberries, pecans, green onions, oranges, and seasonings. Refrigerate for at least 30 minutes to allow flavors to absorb into quinoa.
