1-2 sweet potatoes
Veggies of choice, diced
Seasoning/Herb Suggestions: cumin, smoked paprika, cayenne, chili powder, garlic powder, cilantro
Optional Add-Ins: beans, rice, quinoa, corn


Bake or microwave sweet potatoes until soft.
Sautee veggies of choice with seasonings of choice.
When done, stir in greens and cilantro until cooked down/heated.
When sweet potatoes are able to be handled, peel skin.
Add potatoes and veggie mixture to bowl and mix together.
Place mixture on half of tortilla and fold in half.

Serve with guacamole, salsa, or southwest cashew dip.
