Apple, Kale & White Bean Farro Bowls

A colorful, no fuss fall bowl with chewy farro, white beans, crisp apple, kale, and shredded carrots. The only cooking required is the farro, and even that can be swapped for a microwavable grain.

Ingredients
For the bowls
1 package Trader Joe’s 10 Minute Farro, cooked according to package directions
1 can no salt added or low sodium white beans, drained and rinsed
4 cups chopped kale, stems removed
1 large crisp apple, diced
1½ cups shredded carrots
¼ cup chopped walnuts, optional
2 tablespoons dried cranberries, optional
Maple Dijon Dressing
2 tablespoons Dijon mustard
2 tablespoons apple cider vinegar
1 tablespoon pure maple syrup
1 tablespoon lemon juice
2 to 3 tablespoons water, as needed
Black pepper, to taste
Instructions
Prepare the farro according to package directions.
While the farro cooks, whisk together the Dijon mustard, apple cider vinegar, maple syrup, lemon juice, water, and black pepper.
Place the chopped kale in a large bowl. Add about 1 tablespoon of the dressing and massage the kale with clean hands for 30 to 60 seconds, just until softened.
Add the cooked farro, white beans, diced apple, and shredded carrots.
Drizzle with the remaining dressing and toss gently to combine.
Divide among four bowls and top with walnuts and dried cranberries, if using.

No Trader Joe’s 10 Minute Farro? Use whatever makes the meal easiest.
Regular farro works well, but you can also substitute brown rice, barley, quinoa, or another favorite whole grain. A plain microwavable whole grain pouch is an excellent shortcut too.
For meal prep, keep the apple separate until serving if you want it to stay especially crisp.
